My 4 Favorite Pumpkin Recipes



YES IT'S OCTOBER AND TIME FOR PUMPKIN ERR-THING!

Even though I am living in Sweden this fall and pumpkin is uber expensive, I am still keeping up my tradition of over indulging in pumpkin sweets. I have compiled my five favorite pumpkin recipes to share with you.



From Sally's Baking Addiction, is "Healthy Pumpkin Cookies". I'm not sure how something healthy can also be a cookie, but these are just awesome. I made them last year for a year event and I didn't have any left over to bring home!



Last year I really got into mug cakes. I found this pumpkin coffee cake mug cake recipe from Heather Likes Food and it really hits the spot when you want something sweet up don't really feel like making a whole cake or cleaning a lot of dishes.



Breakfast food is just better. I have no same in eating breakfast food for lunch or dinner. I found this super simple gluten-free, vegan pumpkin waffle recipe from Strength and Sunshine. I feel like I'm being indulgent but the waffles are pretty healthy for you. However if you add chocolate chips or a ton of whip cream like I do, then the health factor declines.



Alright, up until now all of these recipes have been fairly healthy for you... this one is different. There is nothing healthy about Pumpkin Biscoff Bread from Love from the Oven. If you don't know what Biscoff is, please get into your car ASAP, drive to your nearest supermarket, head to the peanut butter aisle, buy a jar of Biscoff and never look at life the same way again. Pumpkin and Biscoff spread compliment each other so well its crazy. This is another great recipe to bring to gatherings or other places you want to show off your culinary skills.
